When you are on a reduced or low-carb diet it can be very difficult to satisfy the occasional need for something sweet. You have family or friends joining you for dinner and you want to be able to serve them a special treat but you don’t want to be tempted by a carbohydrate loaded dessert. Most of your friends would probably not want to try “Keto Pudding” (I’ll share the recipe.) but they might be very open to the idea of a low carb chocolate mousse. I love to entertain, so I have come up with a few delicious treats that you can share with your friends without blowing your entire week’s-worth of carbs in a single meal. I hope you and your friends will enjoy these as much as my friends and I have.

Keto Pudding-

1 Stick butter (1/2 cup)

1 package cream cheese (8 Ounces)

1/2 – 3/4 cup Stevia or similar artificial sweetener

1/2 teaspoon vanilla or 1 tablespoon cocoa powder (You can substitute about any flavor you want.)

Mix all ingredients until fluffy and serve.

 

Chocolate Mousse-

1 envelope HealthWise chocolate pudding mix

8oz Heavy Cream

Place in blender and blend on high speed until desired consistency. (In the Ninja it only takes 70 seconds to get it to stiff peak stage.)

Serve and enjoy! (You will want to share or save some for later. It is very filling!)

 

Chocolate Ice Cream- (Think Wendy’s Frosty!)

3 envelopes HealthWise® chocolate pudding mix

32oz Heavy Cream

Place in blender and blend on high speed until desired consistency. (In the Ninja it only takes 70 seconds to get it to stiff peak stage.)

Once prepared, put chocolate mousse in a sealed container and put in freezer. Stir every 30 minutes or so for about two hours. It will have the consistency of a Wendy’s Frosty. This makes enough for 6.
