Dr. Webb told me how much she loves this slaw. I tried it and I have to agree, it is great! The addition of cottage cheese makes this slaw super creamy and gives it an extra kick of healthy protein.

Ingredients:

1 cup small curd cottage cheese

2 tablespoons mayonnaise

½ teaspoon lemon juice

½ teaspoon salt

pepper to taste

1 16oz bag of shredded cabbage (one small head shredded)

1 small onion cut crosswise and thinly sliced

1 tablespoon freshly chopped flat leaf parsley or ½ teaspoon tarragon leaves

 

Preparation:

Mix first five ingredients to make dressing. For a creamer dressing this is best done with a food processor or stick blender. Toss other ingredients together with dressing and let stand 15 minutes or refrigerate for at least two hours before serving.
